El Dorado 8 is a Demerara rum (named for the Demerara River) produced by Demerara Distillers in Guyana. These rums are known for their rich, caramel flavor and are exceptionally popular in many tiki cocktails. They are often described as “smoky” but I think this is wildly misleading. Describing a spirit as smoky brings to mind a peated Scotch or pit-roasted Mescal. El Dorado brings none of that to the table. I think a more accurate description is that there is a hint of char from the barrel aging these rum undergo--for some reason, that tasting note comes through more in Demerara rums that other styles. Which is neither here nor there, because what we need to know is if this rum daiquiris or not!
